There are a lot of videos on Youtube. Aside from that you should be able to find a wide selection of videos you can purchase online or through a catalogue.
As you’ve already said though, you can’t learn without classes so anything you ape from a video will be crude and dangerous to both your partner and yourself. I high advise against trying anything you "learn" from a video outside of properly supervised martial arts class. Good Luck. References :

for bjj …groundfighter.com is great. there is also the gracie university which are online videos and are 8 bucks a lesson (pretty cheap) and you can earn legit rank through this program.

if you’re looking for japanese jujitsu…see http://www.budoshin.com …Kirby sensei is a long time practitioner and teacher, and offers a legit home study program where you can actually earn rank (if you apply yourself, test, and have training partners) all the way to 1st dan. (2nd dan if you pay close attention) ..this course is only like 80 bucks for all the tapes.
if you want very traditional authentic koryu jujutsu. see http://www.skhquest.com and see his ‘takagi yoshin ryu’ course. or just go for the to shin do course.
i have 3 sets of mario sperry’s, and i have all of pedro carvalho’s bjj videos…they are simple and easy to understand, and have chapter breaks between techniques so you can practice. References :
If you know you can’t learn from a video why are you even asking? That makes no sense. You can either learn from a video or you can’t. So what are you going to decide? (I wish all the people who give advise would decide too. Can you learn from a video or can’t you?)
No. No matter what video you get, it won’t be good enough. If you don’t do throws properly, you are risking some very serious injury, both to yourself and to whatever person you’re training with. A school serves more than just a place to receive instruction. It’s a place where you can experiment in a safe environment on people of all different builds. What works on a small person, won’t always work on a bigger person. If I were you, I would seriously reconsider this question. References :
yes. you can "fully learn". the trick is finding dvds where the material is TAUGHT properly. granted, having an instructor will speed things up, but if the material is presented properly, there is no reason you can’t learn it.
